About This Recipe

We have all heard about using cauliflower to make pizza crust so I set out to find a recipe to try.  This recipe is adapted from  Nathan was a little hesitant about this one, but both of us were very surprised at how great this is.  My only tip is to really squeeze the moisture out.  When you think you have squeezed it dry, squeeze it a little more!  This may take some experimenting to get it right.  With a little trial and error, I think you will love this as much as I do.  Next time you grab some cauliflower at the farm, give this a try.


1 small to medium sized head of cauliflower – should yield 2 to 3 cups once processed

1/4 teaspoon kosher salt

1/2 teaspoon dried basil, crushed

1/2 teaspoon dried oregano, crushed

1/2 teaspoon garlic powder

crushed red pepper(optional)

1/4 cup shredded parmesan cheese

1/4 cup mozzarella cheese

1 egg


You will also need sauce, cheese, and other toppings.  I like to use kale as a pizza topping!



  1. Place a baking sheet(or pizza stone) in the oven. Preheat oven to 450 degrees. On a cutting board, place a large piece of parchment paper and spray it with a non-stick cooking spray(I like the olive oil spray).
  2. Wash and dry a small head of cauliflower. Cut off the cauliflower florets. Pulse the cauliflower in the food processor until it looks like snow.  You should end up with 2 to 3 cups of blended up cauliflower.  Cover the cauliflower and microwave in a microwave safe bowl for 4 minutes.  Put the cooked cauliflower onto a clean tea towel and allow plenty of time for the cauliflower to cool.  Make sure you allow it to cool or the next step will burn your fingers (I know because I tend to get a little impatient).
  3. Wrap up the cauliflower in the tea towel and wring the water out of the cauliflower. You really want to get the water out. If not, your pizza will be crumbly.
  4. Add cauliflower to a mixing bowl with parmesan cheese, mozzarella cheese, kosher salt, dried basil, dried oregano, garlic powder, and red pepper(if desired). Now it is time to get dirty.  Mix all of this together, hands work best!
  5. Place your cauliflower dough ball on your parchment paper and pat it down into a pizza crust. Make sure that it is an even thickness (not too thick or thin) and tightly formed.
  6. Slide the parchment paper onto your hot baking sheet (or pizza stone). Bake for 8 – 11 minutes. The cauliflower should turn golden brown.   Oven times vary, so leave it in until you get the golden brown color.  Remove the cauliflower crust from the oven.  Now you can add your sauce, cheese, and toppings.
  7. Put this back in the oven for another 5 to 7 minutes. Watch for the cheese to get bubbly and turn golden brown.
  8. Allow the pizza to cool for a few minutes before cutting and serving.
